Training brings together producers and interested parties to discuss manufacturing, maturation, and good practices in the production of one of the main gastronomic heritages of Minas Gerais

The technical program of ExpoQueijo Brasil 2026 – Araxá International Cheese Awards continued this Thursday (25) with a workshop dedicated to Minas Artisanal Cheese (QMA). Promoted by the FAEMG/SENAR System, the activity was held in the Sebrae Room, at the Grande Hotel and Termas de Araxá Gallery, bringing together producers, industry professionals, and people interested in deepening their knowledge about artisanal production.

During the training, participants received guidance on all stages of the production of Minas Artisanal Cheese, from raw material selection to the maturation process. Topics covered included hygiene, milk quality, use of “pingo” (starter culture), whey, ferments, choice of rennet, salting, water quality, and techniques that directly influence the identity and final quality of the product.

According to the FAEMG/SENAR System instructor, Giancarlo Ferreira, the workshop was specially developed to integrate the ExpoQueijo Brasil program, combining theoretical and practical content aimed at both those already working in the activity and those who wish to learn more about the production chain.

“The role of a workshop is to transmit knowledge so that producers, enthusiasts, and passionate people can grow and seek more information. In this activity, we talked about manufacturing and maturation of Minas Artisanal Cheese. ExpoQueijo is much more than a gastronomic event. It involves producers, families, companies, exchange of information, and valorization of the artisanal cheese production chain,” highlights Giancarlo.

The workshop is part of ExpoQueijo Brasil’s training program, which includes lectures, courses, and debates aimed at strengthening the artisanal cheese production chain. In addition to the international competition, the event seeks to disseminate technical knowledge, encourage good production practices, and promote the exchange of experiences among producers, researchers, and specialists from different regions of Brazil and abroad.
