Considered the main technical attraction of the fair, the competition is conducted through blind tastings, without any identification of the origin or manufacturer of the products.<\/p>\n<p>Throughout the afternoon, the judges analyzed the cheeses following an international protocol that considers criteria such as appearance, texture, aroma, flavor, and overall balance. The evaluations are individual, and each product receives a technical score accompanied by observations that may later serve as a reference for producers.<\/p>\n<p>&#8220;The evaluation is completely blind. We have no contact with the brand or the producer&#8217;s name. First, we observe the overall appearance and look. Then we cut the cheese to evaluate the texture, and finally, we analyze aroma and flavor before assigning the final score. We also record technical observations that are not part of the score but help the producer better understand the result,&#8221; explains judge Daniela Ragazzon, from Paran\u00e1.<\/p>\n<p>More than just determining the winners of the competition, the contest aims to stimulate the evolution of artisan production. The technical evaluations provide parameters for producers to improve processes, correct flaws, and continuously raise the quality of the cheeses. &#8220;Our work goes far beyond just tasting cheeses. The evaluation helps the producer improve their production, adopt more good manufacturing practices, and deliver a quality product to the consumer,&#8221; says judge Jeferson do Nascimento, from Amazonas.<\/p>\n<p>The competitors&#8217; expectations also follow each stage of the judging. Winner of the Super Gold at ExpoQueijo in 2025, Jaime Mendes, from Queijaria Pedra do Segredo, in Alagoa (MG), highlights the impact that the recognition brought to his property. &#8220;Winning the Super Gold is enormous recognition. All of Brazil gets to know our work. This visibility opened new perspectives for the cheese dairy and also for my children&#8217;s future,&#8221; he says.<\/p>\n<p>For him, artisan production goes beyond economic activity. &#8220;Those who make cheese do it because they love it,&#8221; he summarizes.<\/p>\n<p>After the completion of the first stage, the best-evaluated products in each category advance to the following phases of the competition.
